Comfort Me with Apples!
Fresh, crisp apples are a sure sign that fall has arrived... You can feel the season's touch every time you open the front door: The air is cooler, the days are shorter and trees are vivid with bright colors. At the local green grocer or farmers' market, bushels and baskets brim with apples. The delicious, sweet reminder of spring's soft blossoms has at last come to fruit.
To commemorate the apple harvest, we offer Mani Niall's Deep Dish Apple Pie for a Dozen. It's perfect for tailgate parties, weekend gatherings or Thanksgiving. Great Pumpkin Cookies
Instead of waiting for the mythical Great Pumpkin to loom above the pumpkin patch, bring it to life with this easy recipe.

Ingredients: 2 cups all-purpose unbleached organic flour 1 1/3 cups quick or old-fashioned oats 1 teaspoon baking soda 1 teaspoon ground cinnamon ½ teaspoon salt 1 cup (2 sticks) unsalted organic butter, softened 1 cup Wholesome Sweeteners Organic Fair Trade Sugar 1 cup Wholesome Sweeteners Organic Fair Trade Light Brown Sugar 1 cup pure organic pumpkin 1 large, cage-free egg 1 teaspoon vanilla extract ¾ cup chopped walnuts ¾ cup raisins Decorating icings, semi-sweet chocolate morsels, candies, and additional raisins or nuts (optional) Method: Preheat oven to 350 degrees F. Grease baking sheets. Combine flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, milled golden cane sugar and brown sugar in large mixer bowl until light and fluffy. Add pumpkin, egg and vanilla extract; mix well. Stir in walnuts and raisins. Drop ¼ cup dough onto prepared baking sheet; spread to 3-inch circle or oval. Repeat with remaining dough.
Bake for 14 to 16 minutes or until cookies are firm and lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Decorate as desired with icing, morsels, candies, raisins or nuts. Makes about 20 large cookies.
