Sugar has an indefinite shelf life when stored at ambient temperatures and 40% to 70% relative humidity. On occasion, especially when sugar is exposed to extreme temperatures and low humidity, it cakes. Should this occur, simply rolling the package should restore the sugar's free-flowing characteristics.
Brown sugars should remain in good quality for more than a year if stored in an odor-free environment at 65 to 95 degrees F. Because of the sugar's molasses content, brown sugar might harden. If this happens, simply open the bag and place a moist paper towel over the open bag. The "humidity" created inside the bag will rehydrate and soften the sugar's molasses again.
Please note that Fair Trade Organic Molasses, Organic Blue Agave and Organic Raw Blue Agave should be stored well-sealed in a cool dark place and have a recommended shelf life of 2 years.
Because honey crystallizes as it cools, we suggest storing well-sealed Fair Trade Organic Amber Honey and Fair Trade Organic Raw Honey in a warmer location in your kitchen. Should the honey crystallize, simply place the jar in a bowl of warm water. PLEASE DO NOT MICROWAVE the container.
The code stamped on the package helps Wholesome Sweeteners know when and where the sugar, syrup or honey was packaged. The first two numbers are the year, the next three numbers are the day of the year it was packaged. For example, a code of 07192XX tells us that it was packaged on 192nd day of 2007, or July 11, 2007 at "XX."
